Double Oat Chocolate Chip Cookies
Makes 4 1/2 dozen cookies
3/4 cup soft non-hydrogenated margarine
1 cup granulated sugar
1/2 cup lightly packed brown sugar
1 egg
1 tsp vanilla extract
1/2 cup whole-wheat flour
1 1/2 cups rolled oats
1 cup oat bran
1 tsp baking soda
1/8 tsp salt
1/2 cup toasted chopped pecans
1/2 cup semi-sweet chocolate chips
Preheat oven to 350oF.
Cream together the margarine and sugars until light and creamy. Beat in the egg and vanilla.
Combine the flour, rolled oats, oat bran, baking soda, and salt in a separate bowl. Stir into the creamed mixture and mix well. Stir in the pecans and raisins.
Drop the dough in teaspoonfuls onto a lightly oiled or paper-lined cookie sheet. Bake for 10-12 minutes or until golden brown. After taking cookies out of oven, wait 1 minute before removing cookies from the pan.
