Had your fill of oil already over Chanukah? Try my baked latkes

Yes, I know. Everyone says you’re supposed to eat copious amounts of oil over Chanukah to celebrate the miracle that took place thousands of years  ago when the Maccabee’s one day’s  worth of oil lasted eight days.  I’m still of the belief that this Jewish holiday should be one based on tradition which would make it a low fat festival – one day’s oil should last a full eight days.

In any case, whatever your belief, my Enlightened Potato Latkes are delicious so why not give them a try?
