Blueberry and Apple Muesli – a tasty way to enjoy oats

Here’s a delicious way to reap the health perks of oats, the January grain of the month. Combined with apple, blueberries and almonds and mixed with yogurt, this version of the Swiss Birchermüesli is great at breakfast or as a snack. As it requires at least an hour to soften, make it the night before if you’re in a hurry in the morning.

Blueberry and Apple Muesli

2/3 cup (150 mL) large flake oats
1/2 cup (125 mL) plain low-fat yogurt
1 medium apple, cored and coarsely grated
1 cup (250 mL) fresh or frozen blueberries
1 tbsp (15 mL) fresh lemon juice
1 tbsp (25 mL) honey or equivalent low-calorie sweetener
2 tbsp (25 mL) toasted sliced almonds
Additional honey or low calorie sweetener, if desired.

In a medium bowl, combine oats, yogurt, apple, blueberries, lemon juice, honey or low calorie and sliced almonds. Stir to mix. Cover and refrigerate at least one hour or overnight. Adjust sweetening, if desired
