There’s no doubt that watermelon is a summertime favourite. Truth be told, most people eat it simply because they love it. But it’s more than just refreshing. Check out some of its health perks such as its lycopene and potassium counts. Lycopene is the red pigment with antioxidant power and anti-cancer action that tomatoes are known for. Potassium is a mineral that’s key for blood pressure regulation and a nutrient the majority of people fall short on.

Sweet Watermelon Pizza
Ingredients
• 1 watermelon round cut into 1” (for crust)
• varied amount shredded coconut
• varied amount Greek yogurt of choice
• varied amount Mint
• varied amount Berries of choice (blueberries, strawberries, blackberries)
• varied amount Slivered almonds
Instructions
1. Spread yogurt to cover watermelon leaving room to hold the rind.
2. Sprinkle watermelon pizza with coconut through almond toppings as desired
