Your guests will go nuts over these almonds

Here’s a wonderful nibble for your New Year’s celebration. Or whip up a batch to treat yourself to a tasty snack.  The recipe is from my book ,  The Enlightened Eater’s Whole Foods Guide (Viking Canada).

Glazed Spicy Almonds

Makes 12 servings

2 cups (500 mL) raw almonds (about 8 oz/ 250 g)
1 large egg white
1 tsp (5 mL) ground coriander
1/2 tsp (2 mL) cayenne pepper
1 tbsp (15 mL) chopped fresh rosemary
2 tsp (10 mL) brown sugar
3/4 tsp (4 mL) salt
Parchment paper

Preheat oven to 300°F/150°C.

Place almonds on baking sheet and roast for 12 to 15 minutes or until almonds are golden. Remove almonds from oven and allow to cool for 2 minutes. Lightly beat the egg white and mix with warm almonds and remaining ingredients, tossing to coat evenly.

Line baking tray with parchment paper and spread nuts in a single layer over the tray. Return to the oven and roast for 15 to 20 minutes for a deep golden glaze.

Saturated Fat:  1 gram
Carbohydrate: 5  grams
Dietary Fibre:  3 grams
Sodium: 152  milligrams

      Thanks, Susan! The recipe was adapted from one from the Almond Board. My daughters always tell me about the raves they get when they make them when they’re entertaining. One insisted I post the recipe!
