Here’s a wonderful nibble for your New Year’s celebration. Or whip up a batch to treat yourself to a tasty snack. The recipe is from my book , The Enlightened Eater’s Whole Foods Guide (Viking Canada).
Glazed Spicy Almonds
Makes 12 servings
2 cups (500 mL) raw almonds (about 8 oz/ 250 g)
1 large egg white
1 tsp (5 mL) ground coriander
1/2 tsp (2 mL) cayenne pepper
1 tbsp (15 mL) chopped fresh rosemary
2 tsp (10 mL) brown sugar
3/4 tsp (4 mL) salt
Parchment paper
Preheat oven to 300°F/150°C.
Place almonds on baking sheet and roast for 12 to 15 minutes or until almonds are golden. Remove almonds from oven and allow to cool for 2 minutes. Lightly beat the egg white and mix with warm almonds and remaining ingredients, tossing to coat evenly.
Line baking tray with parchment paper and spread nuts in a single layer over the tray. Return to the oven and roast for 15 to 20 minutes for a deep golden glaze.
