Honey Lime Grilled Pineapple

This weekend marks the official kickoff to the barbecue season here in the Great White North. While some people brave through sleet and snow to cook their food over fire, most Canadians begin their seasonal affair with their grills this weekend. And they continue to fire up their barbecues at a fast and furious pace right through until Labour Day.

While we are becoming more adventurous with our side dishes on the grill, dessert fare coming from the grill is still not the norm. Well it’s time for a change.

Grilling pineapple on the barbecue is a surprising taste treat. It creates a wonderful texture and increases the sweetness.  For a faster preparation, you can purchase the pineapple already peeled and cored in some stores. Serve the pineapple with low-fat frozen yogurt.

Honey Lime Grilled Pineapple

Serves 6

1/3 cup (75 mL) honey
2 tbsp (25 mL) fresh lime juice
1 tsp (5 mL) lime zest
1 large pineapple, peeled

In a small bowl, mix together honey, lime juice and lime zest.

Slice pineapple into 3/4-inch (1.8-cm) slices. Remove core and place in a shallow dish. Pour honey mixture over and turn pineapple to coat. Allow to marinate for at least 20 minutes.

Remove pineapple from marinade and grill over medium-high heat for  3 to 4 minutes or until fruit is golden. Turn over and grill another 3 to 4 minutes.

Serve with frozen yogurt and drizzle any leftover marinade over top .

    I love pineapple. It’s already sweet enough, but I bet this makes it even sweeter.
