Medjool Date Apple Salad with Spinach

Medjool Date Spinach and Apple SaladSugar has been a very hot topic as of late with the latest research labelling it as a major culprit in the development of various diseases. But as you work towards slashing your sugar intake, before you throw the baby out with the bath water, keep in mind that it’s added sugars and those found in products such as fruit juice, not those found in whole foods such as fruit, that are the villains.

Medjool Date Apple Salad with Spinach

Serves 4

3 tbsp extra virgin olive oil
2 tbsp Apple cider vinegar
2 tbsp small diced red onion
1 tbsp Dijon mustard
1/2 cup Medjool Dates, pitted, cut in 1/2 then sliced
1 Frisee, cut into bite size pieces
4 cups spinach
1 apple, cored then, thinly sliced
1/2 cup chopped pistachios
1 pear cored thinly sliced
2 radishes thinly sliced
Salt & freshly ground pepper, to taste

Mix oil, vinegar, onion and Dijon mustard in a bowl until blended.

Add remaining ingredients to a large mixing bowl and season with salt and pepper to taste. Toss with dressing and serve.
Serve immediately.
